Superfoods are mostly plant-based but also include some fish and dairy thought to be nutritionally dense and thus good for one's health. Blueberries, Salmon, Kale and Acai are just a few examples of foods that have garnered the "superfood" label.
Superfoods can give your diet a healthy boost, while reducing your risk of heart disease, memory loss, and other health problems. These foods pack a big nutritional punch. They're strong sources of vitamins, minerals, fiber, and other essential nutrients and a step towards a healthy lifestyle.
Mandala being an organic and nutritional food brand has plenty of superfoods in its dishes. Listed below are superfood ingredients which we pack in our bowls, salads and sandwiches -
1. Shiitake Mushrooms - The shiitake is an edible mushroom native to East Asia, which is cultivated and consumed in many Asian countries. Shiitake mushrooms are a superfood because they help fight obesity, lowers cholesterol, increases immunity, destroys cancer cells, and lastly provides vitamin D. We have ample shiitake mushrooms in two of our Mandala dishes - The Shiitake & Edamame Soba Noodles Stir Fry, and The Forest Bowl with Wild Rice. The Shiitake & Edamame Soba Noodles Stir Fry Bowl includes buckwheat soba noodles wok tossed with Shiitake mushrooms and Edamame seasoned with garlic, ginger, gluten-free tamari and mirin sprinkled with sesame seeds. Forest Bowl with Wild Rice is a deep and dark forbidden bowl of tender black rice infused with the distinctive flavors of coconut curry and topped with succulent chickpeas and shiitake mushrooms.
2. Beans - Beans are nutritional powerhouses packed with protein, fiber, Vitamin B, Iron, Potassium, and are low in fats. It aids in fighting cancer, lowers cholesterol, helps in weight loss, and managing diabetes. We use mexican beans in two of our Mandala dishes - The Potato & Green Rice Burrito Bowl and The Deconstructed Nachos Bowl. The Potato and Green Rice Burrito Bowl has green rice, spicy sweet potato cubes, and mexican beans served with a side of chunky guac and corn salsa. The Deconstructed nachos bowl includes, nachos served with beans, micro greens in sour cream with a side of salsa and guacamole.
3. Spinach - Green, leafy and available in abundance year round. It is a rich source of minerals, vitamins, pigments, and phytonutrients. All of these together make spinach very beneficial for a number of vital processes. The health benefits of spinach include skin care, improved eyesight, regulated blood pressure, stronger muscles, and prevention of age-related macular degeneration (AMD) and hemophilia. It is also good for treating cataracts, atherosclerosis, heart attacks, and neurological disorders. Aside from all this, it aids in the healthy fetal development and growth of infants. We have spinach in three of our Mandala dishes - The Korean Bibimap, Sri Lankan Rice (Chicken & Paneer), and in our Quinoa and Semolina Pasta. The Korean Bibimap Bowl comes with stir fried mushrooms, bean sprouts, radish, chicken/paneer, spinach, zucchini and carrots in a Bibimbap sauce with sesame infused brown rice which is spicy and tangy at the same time.
Always remember, choosing to have organic vegetables is better for you and will allow your body to absorb the maximum nutrients from the vegetable.
